Chinese stuffed dumplings

Sorry it's been such a while since I posted a recipie, but here's one I made with our son a couple of weeks ago and have been meaning to post for you...

 

These are very simple Chinese dumplings, stuffed with a pork mince mixture, that can be steamed or fried...

 

Ingredients (enough for about 16 large dumplings)

 

Pork mince (about 250g)

Vegetables chopped small (I used leek, carrot, sweetcorn and onion, but you could just use what you prefer)

fresh ginger & garlic chopped finely

red asian chillis (chopped finely)

Soy sauce (about 10/15 ml)

1 teaspoon sugar

seasoning (if needed)

 

I also used some lemon grass which is not really a typical ingredient but gave a nice fresh flavour

Fry the mince and then add the other ingredients (vegetables etc) and cook for about 20 minutes, then allow it to cool down.

Meanwhile you can make the dumplings: just plain flour (about 400g) and some warm water (about 100ml) and a pinch of salt. Mix the water into the flour gradually until it forms a soft dough (a bit softer than for pasta). Knead the dough thoroughly, and then leave it for about 10 minutes to rest. Then you can divide it into pieces (about the size of a golf ball) and then roll them into little circles (not too thin) about the size of a CD. (...or get your kids to do it for you!! :) )

When the pork mixture is cool then place a spoonfull in the middle of each dumpling and close it up like a little purse (squeeze the pastry together so it seals)

They can now be either steamed (use a few lettuce leaves or baking paper so they don't stick to the steamer!)

...or shallow fied in a little oil, and then glazed with some honey and soy sauce...!
