Dried peppers

I just love to dry peppers, both int the air and with the dehydrator. Most of the peppers seems to keep thier colors but look at the Bulgarian Carrot, one pod was deired in the dehydrator and lost most of it yellow color but it kept its shape, the pod that was dried in the air it kept its color but lost its shap :rolleyes: The Jamacian Bells are excellent christmas decoration.

Nice colour and shapes!Which dehidrator do you use ?Do you dry whole peppers ? (I cut them in two or four parts)Later will you grind dried peppers to produce powder or will you break them when using ?

Ciao! And Thanks!A swedish dehydrator called OBH NORDICA.I dry the peppers whole when I use them for chile paste, chile flakes and for decoration. THis year I had so little time that I did not dry so many peppers in two or four parts (which I belive is recomended when you produce powder). Do you know of a way to remove seeds after drying? (in the picture just the Hot Pepper Lantern is cut in two, the Habanero i actually a strange double pod.)Lonewolf your powder making has been a real help for me, thanks. Next year I hope I have the time to make more powders.RegardsPatrik

I'd love to dry my peppers, but I can´t find a dehydrator over here, so I put some in the oven, at 50ºC with air ventilation as I read in another topic, don't remember where, but after 24 hours not all of them were still dehydrated ! Does it usually take so long ? :blink:

Yes, at 50°C the time to dehidrate is very long , may require even two days ... expecially if you don't cut pods and you are drying habaneros or pods with thick walls.

As Lonewolf says it does take long time especially when the pods are not cut in half. But even then it does quite long take time to dry the pods. But some pods with thin "flesh" goes fast, like Criolla Sella. Patrik

I grew the Criolla Sella on 2007.Some pods I forget to harvest dried easily on the plant; nice variety to produce hot powder !
